Classic marble cake.

Ingredients

Maida (all-purpose flour, plain flour)1½ cups
Sugar¾ cup plus 2 tbsp
Butter½ cup, softened
Egg2
Milk¾ cup
Baking powder1½ tsp
Salta pinch
Vanilla essence (vanilla flavouring, imitation vanilla extract)1 tsp
Cocoa powder (unsweetened cocoa powder)3 tbsp

Method

5 steps
  1. 1Heat the oven to 170 C and line a loaf tin. Cream butter and sugar until pale, then beat in the eggs and vanilla.
  2. 2Fold in the maida, baking powder and salt alternately with 2/3 of the milk.
  3. 3Take out a third of the batter and stir in the cocoa and the remaining milk.
  4. 4Spoon the batters into the tin in alternate dollops, then drag a skewer through in two or three figure eights.
  5. 5Bake 45 to 50 minutes, cool 10 minutes in the tin, then on a rack.
Serve it like this

Slice thick to show the swirl and serve on a plate with hot chai, or pack two slices in a tiffin box.
