Ingredients

Pork ribs1 kg pork bones or ribs
Water3 litres
Onion1
Saltto taste
Potato4, halved
Sweet potato400 g kūmara, in chunks
Pumpkin300 g, in chunks
Watercressa big bunch (puha if you can find it)
Maida (all-purpose flour, plain flour)2 cups, for doughboys
Baking powder2 tsp

Method

4 steps
  1. 1Simmer the pork bones with onion and salt for 1 1/2 hours.
  2. 2Add potato, kūmara and pumpkin and simmer 15 minutes.
  3. 3Mix flour, baking powder, salt and enough water to make a soft dough. Drop spoonfuls into the pot.
  4. 4Add the watercress, cover and simmer 15 minutes.
Serve it like this

Ladle meat, vegetables, greens and doughboys into big bowls with plenty of broth, with rēwena bread and butter on the side.
