Ingredients

Blueberriesabout 5 cups, fresh or frozen
Sugar¾ cup
Cornflour (cornstarch)¼ cup
Lemon juice1 tbsp
Cinnamon powdera pinch
Maida (all-purpose flour, plain flour)2½ cups, for crust
Butter180 g cold for crust, 20 g to dot
Salt½ tsp
Water6 tbsp iced water

Method

5 steps
  1. 1Rub cold butter into flour and salt until pea sized, add iced water and form two discs. Chill 1 hour.
  2. 2Toss blueberries with sugar, cornflour, lemon and cinnamon.
  3. 3Line a 23 cm pie dish with one disc, fill, dot with butter and top with the second disc or a lattice. Cut vents and brush with milk.
  4. 4Bake at 220°C for 20 minutes, then 180°C for 40 to 50 minutes until the juices bubble thickly through the vents.
  5. 5Cool at least 3 hours before cutting.
Serve it like this

Serve slices at room temperature with vanilla ice cream or whipped cream, the purple juices pooling on the plate.
