Classic mahshi kromb.

Ingredients

6 servings
Cabbage1 large cabbage, leaves separated
Short grain rice (sushi rice)1½ cups Egyptian or short grain rice, rinsed
Tomato3, grated
Tomato puree2 tbsp tomato paste
Onion1, finely chopped
Dill leavesa handful
Flat leaf parsleya handful
Coriander leaves (cilantro)a handful
Mint leavesa few sprigs
Ghee3 tbsp samna or ghee
Cooking oil (vegetable oil)1½ tbsp
Cumin powder (ground cumin)1½ tsp
Garlic5 cloves, whole
Vegetable stock (vegetable broth)2½ cups
Saltto taste

Method

4 steps
  1. 1Blanch the cabbage leaves in salted water until pliable, cut out the thick ribs and halve large leaves.
  2. 2Mix rice, grated tomato, onion, chopped herbs, half the ghee, oil, cumin and salt.
  3. 3Lay a teaspoon of filling along each leaf, fold the sides and roll finger thin. Pack tightly in a pot lined with cabbage ribs, tucking in the garlic.
  4. 4Pour over the stock mixed with tomato paste and the rest of the ghee, weigh down with a plate and simmer covered until the rice is tender.
Serve it like this

Invert the pot onto a platter so the rolls come out in neat rows, or pile them high. Serve warm with yoghurt and a squeeze of lemon.
