Ingredients

8 servings
Butter125 g, melted and cooled, plus extra for the tin
Sugar⅔ cup
Egg3
Maida (all-purpose flour, plain flour)1 cup
Baking powder1 tsp
Lemonzest of 1
Honey1 tbsp
Salta pinch

Method

5 steps
  1. 1Whisk eggs and sugar until pale and thick.
  2. 2Fold in flour, baking powder, salt and zest, then the melted butter and honey.
  3. 3Cover and chill at least 1 hour.
  4. 4Butter and flour the madeleine tin. Fill each shell three quarters full.
  5. 5Bake at 220 C for 5 minutes, then 190 C until golden and humped.
Serve it like this

Serve warm, ridged side down so the hump shows, on a plate or in a paper lined basket. Tea or coffee alongside.
