Ingredients

4 servings
Lobster450 g cooked lobster meat, in chunks (or large prawns)
Mayonnaise3 tbsp
Celery1 stick, finely diced
Lemon juice2 tsp
Flat leaf parsley1 tbsp, chopped
Salta pinch
Black peppera pinch
Butter2 tbsp, for toasting
Burger bun4 split top hot dog style buns
Lettucea few leaves

Method

4 steps
  1. 1If cooking whole lobster, boil 8 to 10 minutes per 500 g, chill in ice water and pick the meat from tail, claws and knuckles.
  2. 2Toss lobster gently with mayo, celery, lemon, parsley, salt and pepper.
  3. 3Butter the outside of each bun and toast in a pan until golden.
  4. 4Line buns with lettuce and pile in lobster.
Serve it like this

Serve in a paper boat or on a plate with lemon wedges, potato chips and pickles. Lobster cold, bun warm.
