Maida (all-purpose flour, plain flour)3⅔ cups
Instant dry yeast2 tsp
Curd (plain yogurt, natural yoghurt)¾ cup
Waterabout 1/2 cup, warm
Cooking oil (vegetable oil)1½ tbsp
Sugar1 tsp
Salt2 tsp, divided
Rajma, dry (dried red kidney beans)1 cup dry, soaked overnight
Onion1 medium, finely chopped
Butter4 tbsp, divided
Khmeli suneli½ tsp
Black pepper½ tsp

- 1Boil the soaked beans until very soft, drain and mash with a little of their water.
- 2Fry the onion in 40 g butter until golden; mix into the beans with khmeli suneli, pepper and 1 tsp salt. Cool.
- 3Mix flour, yeast, sugar, remaining salt, curd, water and oil into a soft dough. Knead and rise until doubled.
- 4Divide in two. Flatten each, wrap around half the filling, seal and roll gently into a 25 cm round. Poke a small hole in the top and brush with egg.
- 5Bake at 220°C until deep golden. Brush with the remaining butter and cut into wedges.
Serve it like thisCut into wedges on a board while warm, filling showing. Serve with pickles and tea.
