Ingredients

4 servings
Cooked rice2 cups leftover rice
Rava (semolina)½ cup
Curd (plain yogurt, natural yoghurt)½ cup
Water¾ cup
Rice flour3 tbsp
Onion1 small, finely chopped
Green chilli1, chopped
Ginger1.5 cm, grated
Cumin seeds½ tsp
Coriander leaves (cilantro)1 tbsp
Salt¾ tsp
Cooking oil (vegetable oil)1½ tbsp

Method

3 steps
  1. 1Grind rice, rava, curd and water to a smooth batter. Rest 10 minutes.
  2. 2Stir in rice flour, onion, chilli, ginger, cumin, coriander and salt.
  3. 3Spread thin on a hot tawa, drizzle oil and cook till crisp. Fold.
Serve it like this

Serve straight off the tawa, folded, with chutney and sambar in small bowls on the side.
