Ingredients

4 servings
Pork200 g pork shoulder plus 100 g minced, and pork bones if you have them
Prawns (shrimp)8, peeled
Water8 cups
Onion1, charred
Dried shrimp1 tbsp
Jaggery2 tsp
Fish sauce2 tbsp
Garlic8 cloves, chopped
Cooking oil (vegetable oil)1½ tbsp
Rice noodles300 g thin rice noodles
Moong sprouts (mung bean sprouts)bean sprouts
Spring onion (green onion, scallion)sliced
Coriander leaves (cilantro)chopped
Lemonlime wedges
Black pepper½ tsp

Method

4 steps
  1. 1Simmer pork shoulder (and bones), charred onion and dried shrimp in the water gently for 1 hour, skimming.
  2. 2Fry garlic in oil until golden for garlic oil.
  3. 3Season broth with fish sauce and jaggery. Poach the minced pork and prawns in it until cooked through. Slice the shoulder.
  4. 4Blanch noodles and sprouts, place in bowls, top with pork and prawns and ladle over hot broth. Finish with garlic oil, herbs and pepper.
Serve it like this

Serve in big bowls with pork and prawns on top, a drizzle of garlic oil and herbs. Lime, chilli and sugar on the table.
