Ingredients

4 servings
Chicken, curry cut (bone in chicken, small pieces)1 chicken (about 1 kg), in pieces
Thick coconut milk1⅔ cups
Onion1, finely chopped
Tomato2, grated
Garlic5 cloves
Gingerthumb
Green chilli2
Turmeric (ground turmeric)1 tsp
Cumin powder (ground cumin)1 tsp
Coriander powder (ground coriander)2 tsp
Lemon juice2 tbsp
Cooking oil (vegetable oil)1½ tbsp
Coriander leaves (cilantro)a handful
Saltto taste

Method

4 steps
  1. 1Marinate the chicken with garlic, ginger, chilli, turmeric, lemon and salt for 30 minutes.
  2. 2Grill over charcoal or under a hot grill until charred and nearly cooked.
  3. 3Fry onion in oil, add tomato and spices and cook down. Pour in coconut milk and simmer gently.
  4. 4Add the chicken and simmer until cooked through with no pink. Finish with coriander.
Serve it like this

Serve in a wide bowl with coriander on top and coconut rice or chapati alongside.
