Ingredients

4 servings
Potato8 medium, divided
Maida (all-purpose flour, plain flour)1 cup
Salt1½ tsp
Pork belly200 g, finely diced
Onion2 medium, finely chopped
Allspice¼ tsp ground
Black pepper¼ tsp
Butter2 tbsp, melted
Lingonberry jam½ cup

Method

7 steps
  1. 1Boil half the potatoes until soft, peel and mash. Cool completely.
  2. 2Peel and finely grate the rest of the potatoes. Squeeze in a cloth until very dry.
  3. 3Mix the raw and mashed potato with the maida and salt into a dough.
  4. 4Fry the pork belly until crisp and cooked through, add the onion and cook until soft. Season with allspice and pepper and cool.
  5. 5Divide the dough into 8. Flatten each, put a spoon of filling in the middle and close it into a smooth ball.
  6. 6Lower into simmering salted water and cook 20 minutes after they float, without letting the water boil hard.
  7. 7Serve hot with melted butter and lingonberry jam.
