Ingredients

4 servings
Chicken, curry cut (bone in chicken, small pieces)600 g leg pieces, or 2 whole legs
Gingera few slices
Spring onion (green onion, scallion)3 stalks
Waterto cover
Chinese chilli oil4 tbsp with sediment
Soy sauce2 tbsp
Chinkiang black vinegar1 tbsp
Sugar2 tsp
Garlic3 cloves, crushed
Sichuan peppercorn1 tsp, toasted and ground
Sesame seeds2 tsp, toasted
Peanuts2 tbsp, roasted and crushed
Coriander leaves (cilantro)a handful
Salt½ tsp

Method

4 steps
  1. 1Poach the chicken with ginger and spring onion at a bare simmer for 15 minutes, then turn off the heat and leave 10 minutes.
  2. 2Plunge into iced water for 5 minutes, then drain and chop into pieces.
  3. 3Mix chilli oil, soy, vinegar, sugar, garlic, Sichuan pepper and a few spoons of the poaching broth.
  4. 4Arrange the chicken on a plate, pour over the sauce and top with sesame, peanuts and coriander.
Serve it like this

Arrange chopped chicken in a shallow dish, flood with the red sauce and scatter sesame, peanuts and coriander. Serve cool, not cold.
