Classic korvapuusti.

Ingredients

8 servings
Maida (all-purpose flour, plain flour)4¾ cups
Milk1 cup, lukewarm
Instant dry yeast1 tbsp
Sugar½ cup
Cardamom2 tsp, freshly ground
Salt¾ tsp
Egg1 for dough, 1 for brushing
Butter100 g soft for dough, 80 g for filling
Brown sugar⅓ cup, for filling
Cinnamon powder1½ tbsp
Pearl sugar3 tbsp

Method

5 steps
  1. 1Mix milk, yeast, sugar, cardamom, salt and one egg. Add flour and knead, then work in the soft butter until glossy.
  2. 2Cover and rise until doubled.
  3. 3Roll into a large rectangle, spread with soft butter, sprinkle brown sugar and cinnamon. Roll up tightly.
  4. 4Cut into trapezoids, stand each on its wide side and press the middle down firmly with two fingers.
  5. 5Rise 30 minutes, brush with egg, sprinkle pearl sugar and bake at 225°C for 10 to 12 minutes.
Serve it like this

Pile on a board while still warm, pearl sugar glittering. Serve with strong filter coffee.
