Ingredients

4 servings
Colocasia leaves (taro leaves)about 20 leaves, stems removed, chopped
Red palm oil4 tbsp
Onion1 large, chopped
Tomato2 large, chopped
Scotch bonnet chilli (habanero or scotch bonnet pepper, habanero chilli)½
Ginger2.5 cm
Garlic2 cloves
Melon seeds (melon seeds, peeled)½ cup egusi or magaz, ground
Dried salted fish1 piece smoked fish, flaked
Egg4, boiled
Saltto taste

Method

4 steps
  1. 1Boil the chopped leaves in salted water for 15 minutes, drain and squeeze.
  2. 2Fry onion, ginger, garlic and chilli in palm oil, then add tomato and cook down.
  3. 3Mix ground egusi with a little water and drop in. Let it set 3 minutes, then stir gently.
  4. 4Add the leaves and fish and simmer 10 minutes. Add halved eggs.
Serve it like this

Serve in a bowl with boiled yam, green plantain or rice, egg halves on top.
