Soybeans¾ cup dried, soaked
Water3 cups, divided
Pork150 g, sliced
Napa cabbage kimchi1 cup, chopped
Onion½ small, sliced
Garlic3 cloves, minced
Gochugaru2 tsp
Fish sauce2 tsp
Salta pinch
Sesame oil1 tsp
Spring onion (green onion, scallion)1 stalk, choppedMethod
- 1Soak the soybeans 6 hours, rub off loose skins and grind with 200 ml water until smooth.
- 2Fry the pork in sesame oil, then add kimchi, onion and garlic for 5 minutes.
- 3Add the remaining water and gochugaru and simmer 5 minutes.
- 4Pour in the soybean purée, do not stir, and simmer on low 10 minutes until it curdles softly.
- 5Season with fish sauce and salt, check the pork is cooked through and scatter spring onion.
Serve it like thisServe bubbling in an earthenware pot with spring onion on top, steamed rice and a dish of kimchi.
