Ingredients

4 servings
Egg yolk2 pasteurised yolks
Sugar¼ cup + 1 tbsp
Vanilla essence (vanilla flavouring, imitation vanilla extract)1 tsp
Curd (plain yogurt, natural yoghurt)¾ cup thick plain yoghurt
Buttermilk4 cups
Lemonzest and juice of 1/2
Tea biscuits (marie biscuits or plain sweet biscuits, rich tea biscuits)kammerjunkere or small crisp vanilla biscuits
Strawberries200 g, sliced

Method

4 steps
  1. 1Whisk the yolks with sugar and vanilla until pale and thick.
  2. 2Whisk in the yoghurt, then the buttermilk a little at a time. Add lemon zest and juice.
  3. 3Chill at least 1 hour.
  4. 4Serve in bowls with crumbled biscuits and strawberries.
Serve it like this

Pour into chilled bowls, top with sliced strawberries and a handful of crumbled biscuits just before eating.
