Ingredients: 750 g small pieces chicken, curry cut (bone in chicken, small pieces); 1/4 cup curd (plain yogurt, natural yoghurt); 1 1/2 tbsp ginger garlic paste; 1/4 tsp turmeric (ground turmeric); 1 tbsp divided red chilli powder (indian red chili powder); 1 1/2 tsp salt; 3 tbsp cooking oil (vegetable oil); 2 cloves 1 inch cinnamon, 2 cardamoms whole spices; 1 large finely chopped onion; 3 slit green chilli; 2 sprigs curry leaves; 2 tsp coriander powder (ground coriander); 1 1/2 tsp garam masala; 1 tsp crushed black pepper; 10 optional cashews; 2 tsp lemon juice; a little chopped coriander leaves (cilantro)

Ginger garlic paste1½ tbsp

Turmeric (ground turmeric)¼ tsp

Red chilli powder (indian red chili powder)1 tbsp, divided

Salt1½ tsp

Cooking oil (vegetable oil)3 tbsp

Whole spices2 cloves, 1 inch cinnamon, 2 cardamoms

Onion1 large, finely chopped

Green chilli3, slit

Curry leaves2 sprigs

Coriander powder (ground coriander)2 tsp

Garam masala1½ tsp

Black pepper1 tsp, crushed

Cashews10, optional

Lemon juice2 tsp

Coriander leaves (cilantro)a little, chopped

Method

5 steps

1Marinate the chicken with curd, ginger garlic paste, turmeric, half the chilli powder and salt for 30 minutes.
2Heat the oil. Add the whole spices, then the onion, green chillies and one sprig of curry leaves. Fry until golden.
3Add the chicken and cook on high for 5 minutes, then cover and cook on medium in its own juices.
4Uncover, add the remaining chilli powder, coriander powder, garam masala and pepper. Fry on medium, stirring, until dry and dark.
5Fry the cashews and the second sprig of curry leaves in a spoon of oil from the pan and toss in. Finish with lemon juice and coriander.

Serve it like this

Serve hot on a plate, with a few fresh coriander leaves on top.
