Ingredients

6 servings
Mutton (goat meat)1.5 kg lamb leg or shoulder, on the bone, in big pieces
Potato6, in wedges
Onion2, in wedges
Garlic1 head, cloves halved
Lemon juice¼ cup
Olive oil4 tbsp
Dried oregano2 tsp
Rosemary2 sprigs
Feta cheese150 g, in chunks
Tomato2, sliced
Saltto taste
Black pepper½ tsp

Method

4 steps
  1. 1Rub the lamb with garlic, lemon, oil, oregano, salt and pepper. Marinate a few hours or overnight.
  2. 2Lay two large sheets of baking paper and foil in a deep tray. Add potatoes, onion, lamb, tomato, rosemary and feta.
  3. 3Pour over the marinade, gather the paper and seal tightly.
  4. 4Bake at 160 C until the lamb falls apart. Open and bake 15 minutes more at 200 C to brown.
Serve it like this

Bring the parcel to the table and open it there. Serve lamb with the potatoes and juices, and a Greek salad.
