Classic kjøttkaker.

Ingredients

5 servings
Minced beef (beef mince, beef or buff keema)600 g
Salt1½ tsp
Cornflour (cornstarch)2 tbsp potato starch or cornflour
Nutmega pinch
Dry ginger powder (ground ginger)a pinch
Black pepper¼ tsp
Milk⅔ cup, cold
Butter3 tbsp
Maida (all-purpose flour, plain flour)¼ cup
Beef stock (beef broth)2 cups
Potatoboiled, to serve
Green peasmashed with butter (ertestuing)
Lingonberry jam3 tbsp

Method

5 steps
  1. 1Mix the mince and salt until sticky, then add starch, spices and the cold milk a little at a time.
  2. 2Shape 10 flat oval cakes and brown in a little butter. Set aside.
  3. 3Brown sauce: melt the rest of the butter, stir in flour and cook until it smells of toast and turns chestnut. Whisk in stock.
  4. 4Return the cakes to the sauce and simmer.
  5. 5Serve with potatoes, mashed peas and lingonberries.
Serve it like this

Serve two or three cakes per plate with plenty of brown sauce, boiled potatoes, mashed peas and lingonberry jam.
