Ingredients

Beef600 g very lean beef (top round), finely minced by hand
Niter kibbeh (spiced clarified butter)4 tbsp
Mitmita1 tbsp
Cardamom½ tsp korarima or green cardamom
Saltto taste
Chhena1 cup ayib (fresh cheese) or crumbled chhena
Collard greens (haak)gomen (collard greens), cooked

Method

4 steps
  1. 1Melt the niter kibbeh gently with mitmita and korarima until fragrant; do not let it sizzle hard.
  2. 2Add the minced beef and salt and toss to coat.
  3. 3Cook, stirring, until the beef is cooked through with no pink (yebesele kitfo).
  4. 4Serve with ayib and gomen on the side.
Serve it like this

Mound the kitfo on a plate or injera with a scoop of ayib and gomen beside it. Serve with kocho or injera.
