Ingredients

Mutton (goat meat)600 g curry cut
Potato2 medium, halved
Onion2 medium, sliced
Ginger garlic paste2 tbsp
Green chilli4, slit
Whole spicescinnamon, cloves, cardamom, peppercorns
Turmeric (ground turmeric)½ tsp
Coriander powder (ground coriander)1¼ tsp
Thick coconut milk¾ cup
Cashews¼ cup, ground
Cooking oil (vegetable oil)2 tbsp
Coriander leaves (cilantro)a handful
Saltto taste
Water2 cups

Method

4 steps
  1. 1Heat oil in a cooker, fry whole spices and onions until golden. Add ginger garlic paste and green chillies.
  2. 2Add mutton, turmeric, coriander powder and salt and sear 5 minutes. Add water and pressure cook 5 whistles. Let pressure release naturally.
  3. 3Add potatoes and cook 1 more whistle.
  4. 4Stir in cashew paste and coconut milk and simmer gently 5 minutes, without boiling hard. Finish with coriander.
Serve it like this

Serve hot in a deep bowl with a swirl of ghee or a few coriander leaves on top, and rice or rotis on the side.
