Ingredients

Minced mutton (goat mince, ground goat)500 g
Onion1 small, grated and squeezed
Ginger garlic paste2 tsp
Green chilli1, finely chopped
Garam masala1 tsp
Kashmiri chilli powder1 tsp
Fennel seeds½ tsp, crushed
Mint leavesa handful, chopped
Coriander leaves (cilantro)a handful, chopped
Breadcrumbs½ cup
Egg2, divided
Salt1½ tsp
Puff pastry2 sheets
Nigella seeds½ tsp
Sesame seeds1 tsp
Tomato ketchup (ketchup)to serve

Method

5 steps
  1. 1Mix the mince, onion, ginger garlic paste, chilli, garam masala, chilli powder, fennel, mint, coriander, breadcrumbs, 1 egg and the salt. Chill 15 minutes.
  2. 2Heat the oven to 200°C. Cut each pastry sheet in half lengthways to make 4 strips.
  3. 3Lay a log of filling down the centre of each strip. Brush one edge with beaten egg, fold over and press to seal.
  4. 4Cut each log into 6 pieces, set seam side down on a lined tray, brush with egg, scatter the nigella and sesame and slash the tops twice.
  5. 5Bake in the oven at 200°C for 25 minutes until puffed and golden and no pink remains in the filling.
Serve it like this

Stack the rolls on a board in a loose pyramid, cut side showing on a few, with a small bowl of tomato ketchup mixed with a pinch of chilli powder.
