Ingredients

5 servings
Minced mutton (goat mince, ground goat)700 g lamb mince with some fat
Onion1, grated and squeezed
Red bell pepper (red capsicum, red pepper)1, very finely chopped
Flat leaf parsleyhandful, finely chopped
Garlic3 cloves
Red chilli powder (indian red chili powder)1½ tsp (Aleppo pepper if you have it)
Baharat1½ tsp
Saltto taste
Tomato4, grated
Tomato puree½ cup
Olive oil1½ tbsp
Pita bread4 pitas

Method

5 steps
  1. 1Knead mince with onion, pepper, parsley, garlic, chilli, baharat and salt until sticky. Chill 30 minutes.
  2. 2Shape around flat skewers into long kebabs.
  3. 3Simmer grated tomato, tomato puree, olive oil and a little salt into a thick sauce.
  4. 4Grill the kebabs over high heat, turning, until charred and cooked through with no pink.
  5. 5Lay pita on a platter, spoon over sauce, add kebabs and more sauce.
