Ingredients

4 servings
Maida (all-purpose flour, plain flour)2½ cups
Egg4
Water½ cup
Saltto taste
Nutmega pinch
Gruyère cheese2 cups grated Emmental or Bergkäse
Onion3 medium, thinly sliced
Butter3 tbsp
Black pepperplenty, freshly ground
Spring onion (green onion, scallion)chives or spring onion greens, snipped

Method

5 steps
  1. 1Fry the onions slowly in half the butter until deep golden and crisp at the edges. Set aside.
  2. 2Make the spätzle batter: beat flour, eggs, water, salt and nutmeg until bubbly, then rest 10 minutes.
  3. 3Press into boiling salted water in batches, lifting them out as they float.
  4. 4Layer hot spätzle and cheese in a buttered dish, finishing with cheese. Bake or cover on the stove until melted.
  5. 5Top with the fried onions, black pepper and chives.
Serve it like this

Serve straight from the hot pan or cast iron dish, crowned with fried onions and chives, with a crisp green salad on the side.
