Ingredients

8 servings
Maida (all-purpose flour, plain flour)2½ cups plus 1 tbsp for filling
Instant dry yeast1 tsp
Sugar1½ tbsp
Salt1 tsp
Milk⅔ cup, warm
Butter1½ tbsp
Egg2: 1 for dough, 1 for coating
Minced beef (beef mince, beef or buff keema)200 g
Onion1, finely chopped
Carrotsmall dice
Potatosmall dice
Curry powder1½ tbsp
Tomato ketchup (ketchup)1 tbsp
Worcestershire sauce2 tsp
Waterfor the filling
Breadcrumbs1 cup panko
Cooking oil (vegetable oil)absorbed from frying

Method

5 steps
  1. 1Mix 300 g flour, yeast, sugar, salt, milk, half an egg and butter into a soft dough. Knead 10 minutes and rise 1 hour.
  2. 2Fry the onion, beef, carrot and potato, add curry powder and 1 tbsp flour, then ketchup, Worcestershire and water. Cook until very thick. Cool.
  3. 3Divide dough into 8, roll each flat, fill with curry, pinch tightly shut into ovals.
  4. 4Brush with beaten egg, roll in panko and rise 20 minutes.
  5. 5Fry at 170 C, turning, for 4 to 5 minutes until deep golden.
Serve it like this

Serve warm, split one open to show the curry, on paper with a cold drink or milk tea.
