Per serving, worked out from the ingredient table. Grandma's way is the starting point the other versions are compared with.

Ingredients

2 servings
Egg3
Minced pork (pork mince, ground pork)120 g
Onion1 small, diced
Tomato1, diced
Garlic2 cloves, minced
Fish sauce2 tsp
Oyster sauce2 tsp
Sugar1 tsp
White peppera pinch
Cooking oil (vegetable oil)1 tbsp
Coriander leaves (cilantro)a few sprigs

Method

5 steps
  1. 1Heat half the oil in a wok, fry the garlic until fragrant, then add the pork and break it up.
  2. 2Add onion and tomato, then the fish sauce, oyster sauce, sugar and pepper. Cook until thick and glossy. Tip into a bowl.
  3. 3Wipe the wok, add the rest of the oil and swirl. Beat the eggs and pour them in, tilting to spread a thin round sheet.
  4. 4Spoon the filling into the centre and fold the four sides over it like an envelope.
  5. 5Slide a plate over the wok and flip it out so the seams sit underneath. Top with coriander.
Serve it like this

Turn the parcel seam side down onto a plate of hot jasmine rice and top with coriander and a spoon of sriracha.
