Ingredients

5 servings
Broken wheat (cracked wheat)1¼ cups crushed wheat, soaked
Chicken, curry cut (bone in chicken, small pieces)500 g, bone in
Onion2, sliced
Curd (plain yogurt, natural yoghurt)¾ cup laban or curd
Ghee2 tbsp
Dried lime1 dried lime
Cumin powder (ground cumin)1 tsp
Black pepper½ tsp
Whole spices3 cardamom, 1 cinnamon stick
Saltto taste
Water5 cups

Method

4 steps
  1. 1Simmer chicken with half the onion, whole spices, loomi and water until cooked. Shred the meat and keep the broth.
  2. 2Cook the soaked wheat in the broth on low, stirring often, until very soft.
  3. 3Stir in the curd, cumin, pepper and shredded chicken off high heat.
  4. 4Fry the rest of the onion in ghee until crisp and pour over.
Serve it like this

Ladle into a shallow dish, make a well with ghee, top with crispy onions and serve with lemon and green chilli.
