Oxtail1.5 kg oxtail pieces (about 1 kg meat)
Brown sugar1½ tbsp
Cooking oil (vegetable oil)1½ tbsp
Onion1 large, chopped
Garlic6 cloves
Ginger1 thumb
Spring onion (green onion, scallion)4
Dried thyme1 tsp, or 4 fresh sprigs
Allspice10 pimento berries
Scotch bonnet chilli (habanero or scotch bonnet pepper, habanero chilli)1 whole
Soy sauce1½ tbsp
Worcestershire sauce1 tbsp
Black pepper1 tsp

Carrot2, sliced
Dried white beans (haricot beans, navy beans)⅔ cup dry butter beans, soaked and cooked
Saltto tasteMethod
- 1Season the oxtail with garlic, ginger, spring onion, thyme, pepper, soy and salt. Rest at least 1 hour.
- 2Heat the oil, add the brown sugar and let it caramelise dark, then brown the oxtail in it.
- 3Add onion, allspice, Worcestershire and water to cover. Drop in the whole Scotch bonnet. Simmer covered 2 1/2 to 3 hours.
- 4Add carrots and butter beans for the last 20 minutes. Taste and adjust.
Serve it like thisServe in a deep plate over rice and peas, with plenty of gravy, a few butter beans on top and fried plantain on the side.
