Ingredients

8 servings
Filo pastry (phyllo dough)1 pack, about 12 sheets
Spinach1 big bunch, chopped
Feta cheese200 g, crumbled
Onion1, finely chopped
Egg3
Milk¾ cup
Curd (plain yogurt, natural yoghurt)½ cup thick yoghurt
Cooking oil (vegetable oil)⅓ cup
Black peppera pinch
Nigella seeds1 tsp
Sesame seeds2 tsp

Method

5 steps
  1. 1Soften the onion in 1 tbsp oil, add the spinach and cook until wilted and dry. Cool and mix with feta and pepper.
  2. 2Whisk 2 eggs with the milk, yoghurt and remaining oil to make the sauce.
  3. 3Lay 2 filo sheets in an oiled tray, brush with sauce, repeat until a third of the sheets are used. Spread half the filling.
  4. 4Repeat with more filo, sauce, the rest of the filling, then finish with the last sheets and sauce.
  5. 5Cut into squares, brush with the last egg and scatter nigella and sesame. Rest 15 minutes, then bake at 190°C for 40 minutes.
Serve it like this

Cut into squares and serve warm on a board with Turkish tea, olives, tomatoes and cucumbers.
