Ingredients

4 servings
Aburaage6 sheets, halved to 12 pockets
Water1 cup
Kombua small piece
Sugar4 tbsp, 3 for pockets, 1 for rice
Soy sauce2½ tbsp
Short grain rice (sushi rice)1½ rice cooker cups
Rice vinegar3 tbsp
Salt¾ tsp
Sesame seeds1 tbsp, toasted

Method

4 steps
  1. 1Roll a chopstick over each sheet, cut in half and open into pockets. Pour boiling water over to remove excess oil.
  2. 2Simmer the pockets in water with kombu, 3 tbsp sugar and soy under a drop lid for 15 minutes. Cool in the liquid.
  3. 3Cook the rice. Mix vinegar, remaining sugar and salt and fold into the hot rice with sesame.
  4. 4Squeeze the pockets gently, fill with rice balls and fold the edges closed.
Serve it like this
