Classic hot chocolate fudge.

Ingredients

4 servings
Vanilla ice cream8 scoops
Fresh cream (thickened cream, heavy cream)½ cup
Dark chocolate (bittersweet chocolate)100 g, chopped
Sugar3 tbsp
Cocoa powder (unsweetened cocoa powder)1½ tbsp
Butter1 tbsp
Cashews⅓ cup, roasted and chopped
Salta pinch
Vanilla essence (vanilla flavouring, imitation vanilla extract)½ tsp

Method

5 steps
  1. 1Heat the cream, sugar and cocoa in a small pan, whisking, until it simmers.
  2. 2Off the heat, add the chocolate, butter, vanilla and salt; stir until thick and shiny.
  3. 3Roast the cashews in a dry pan until golden. Chop.
  4. 4Scoop ice cream into tall glasses and pour the hot fudge over generously.
  5. 5Top with cashews and serve at once with long spoons.
