Lobia, dry (dried black eyed peas)1¼ cups dry, soaked overnight
Rice1¼ cups long grain
Bacon (streaky rashers, streaky bacon)4 rashers, or a smoked ham hock
Onion1, chopped
Celery1 stalk, chopped
Capsicum (green capsicum, green bell pepper)½ green bell pepper, chopped
Garlic3 cloves, minced
Chicken stock (chicken broth)about 3 3/4 cups
Bay leaf (indian bay leaf)1
Dried thyme½ tsp
Red chilli powder (indian red chili powder)a pinch of cayenne

Spring onion (green onion, scallion)2, slicedMethod
- 1Simmer the soaked peas in 600 ml of the stock with the bay leaf until just tender, about 40 minutes.
- 2In a heavy pot, render the bacon, then cook onion, celery and pepper until soft. Add garlic, thyme and cayenne.
- 3Stir in the rice to coat, then add the peas with their liquid and the remaining stock. Bring to a boil.
- 4Cover tightly and cook on low for 18 minutes, then rest 10 minutes off the heat.
- 5Fluff with a fork, season and scatter with spring onions.
Serve it like thisMound in a wide bowl with spring onions on top and hot sauce at the table. Serve collards and a wedge of cornbread alongside.
