Ingredients

4 servings
Pumpkin800 g, peeled and cubed
Water2½ cups
Glutinous rice flour (sweet rice flour)⅓ cup
Sugar3 tbsp
Salt½ tsp
Pine nuts1 tbsp, to garnish

Method

4 steps
  1. 1Simmer the pumpkin in the water for 15 to 20 minutes until very soft.
  2. 2Blend the pumpkin with its cooking water until smooth and return to the pot.
  3. 3Whisk the rice flour with 1/2 cup cold water and stir it into the pumpkin. Simmer 5 to 8 minutes, stirring.
  4. 4Season with sugar and salt and serve topped with pine nuts.
Serve it like this

Ladle into small bowls and scatter pine nuts or a few toasted pumpkin seeds on top. Serve warm with barley tea.
