Ingredients

4 servings
Potato4 medium, peeled
Onion1 small, grated
Egg1
Cheddar cheese½ cup grated
Spring onion (green onion, scallion)2 stalks, sliced
Salt¾ tsp
Black pepper½ tsp
Butter2 tbsp, melted
Sour cream⅓ cup, to serve

Method

5 steps
  1. 1Heat the waffle iron to its highest setting. Grate the potatoes and onion on the coarse side of a grater.
  2. 2Pile the potato and onion into a clean kitchen towel and squeeze hard over the sink until no more liquid drips.
  3. 3Mix the potato with the egg, cheese, spring onion, salt and pepper.
  4. 4Brush the iron generously with melted butter. Pack in a thin, even layer of potato, close and cook 10 to 12 minutes without opening early.
  5. 5Lift out carefully with a fork and spatula. Repeat with the rest and serve hot with sour cream.
Serve it like this

Cut each waffle into quarters, stack them on a plate and add a spoon of sour cream with spring onions scattered over.
