Classic hara dhania cholia.

Ingredients

4 servings
Green chickpeas (fresh) (fresh green chickpeas)2 cups, fresh
Coriander leaves (cilantro)1 large bunch
Green chilli3
Ginger2.5 cm
Garlic4 cloves
Cooking oil (vegetable oil)2 tbsp
Cumin seeds1 tsp
Onion1 medium, chopped
Tomato1 medium, chopped
Turmeric (ground turmeric)¼ tsp
Coriander powder (ground coriander)2 tsp
Garam masala½ tsp
Dry mango powder½ tsp
Water¾ cup
Saltto taste

Method

4 steps
  1. 1Grind coriander, green chillies, ginger and garlic into a smooth paste.
  2. 2Heat oil, crackle cumin and fry the onion until soft. Add tomato and cook until mushy.
  3. 3Add the green paste, turmeric and coriander powder and cook 3 minutes.
  4. 4Add the cholia, salt and water. Cover and simmer 10 minutes until tender. Finish with garam masala and amchur.
Serve it like this

Serve hot in a deep bowl with a swirl of ghee or a few coriander leaves on top, and rice or rotis on the side.
