1Cook the soaked beans in the water until very soft: about 75 minutes on the stove, or pressure cook for 5 whistles and let the pressure release naturally.
2Blend the beans with their liquid and strain through a sieve.
3Simmer the purée with coconut milk, evaporated milk, sugar, cinnamon, cloves, nutmeg and salt for 10 minutes.
4Add the sweet potato and raisins and simmer until the potato is tender, about 20 minutes. Stir in butter and vanilla.
Serve it like this
Serve warm or cold in small cups, topped with a few milk biscuits or crisp cassava bread and a dusting of cinnamon.
