Ingredients

2 servings
Short grain rice (sushi rice)1 cup, cooked
Water¾ cup plus 2 tbsp
Kombua small piece
Bonito flakesa small handful
Soy sauce2¼ tbsp
Sugar1½ tbsp
Ginger1 tbsp, grated
Onion1 large, sliced
Beef250 g, sliced paper thin

Method

4 steps
  1. 1Cook the rice. Make a quick dashi with the water, kombu and bonito and strain.
  2. 2Simmer the dashi, soy, sugar and ginger with the onion until soft and sweet.
  3. 3Add the beef, separating the slices, and simmer just until no pink remains. Skim any foam.
  4. 4Spoon beef, onion and plenty of sauce over bowls of rice.
Serve it like this
