Bagel2, split
Cream cheese⅓ cup
Mint leavesa handful
Coriander leaves (cilantro)a big handful
Green chilli1
Lemon juice1 tbsp
Butter2 tsp
Smoked salmon100 g
Cucumber1 small, thinly sliced
Onion½ red onion, thinly sliced
Capers1 tbsp
Chaat masala½ tsp
Salta pinch

Method

5 steps
  1. 1Blend the mint, coriander, chilli, 2 tsp lemon and a pinch of salt with 1 tbsp water into a thick chutney.
  2. 2Swirl 2 tbsp of the chutney into the cream cheese, leaving green streaks.
  3. 3Toss the onion with the rest of the lemon and a pinch of salt. Leave 5 minutes.
  4. 4Butter the cut sides of the bagels and toast on a tawa on medium heat for 2 minutes.
  5. 5Spread with chutney cream cheese, then layer cucumber, salmon, onion and capers. Dust with chaat masala and dot with the remaining chutney.
Serve it like this

Set the open halves side by side, salmon folded in loose ribbons, onion and capers scattered. Dot chutney on the plate and add a lemon wedge.
