Ingredients

3 servings
Buckwheat groats1 cup
Water1⅔ cups
Butter1½ tbsp
Salt½ tsp
Milkwarm, to serve

Method

4 steps
  1. 1Rinse the buckwheat and toast it in a dry heavy pan for 4 minutes.
  2. 2Add boiling water and salt, cover tightly and cook on the lowest heat 15 minutes.
  3. 3Off the heat, add butter, cover and rest 5 to 10 minutes.
  4. 4Fluff and serve with warm milk poured over, or alongside a fried egg.
Serve it like this

Serve in a bowl with a knob of butter melting on top and warm milk poured around, or alongside eggs and pickles for a savoury plate.
