Ingredients

4 servings
Whole green moong (mung beans)½ cup, dry roasted
Potato6 baby potatoes, whole
Sweet potato2 small, whole
Brinjal (eggplant, aubergine)4 small, whole
Green peas1 cup, in pods if possible
Green beansflat beans, whole
Spinacha bunch, whole leaves
Ginger2.5 cm, sliced
Green chilli4, whole
Sugar1 tsp
Mustard oil1½ tbsp
Water4 cups
Saltto taste

Method

4 steps
  1. 1Dry roast whole moong until fragrant.
  2. 2Boil moong with water until half cooked; add whole vegetables, ginger, chillies, salt and sugar.
  3. 3Simmer until everything is soft but whole.
  4. 4Drizzle raw mustard oil, cool and keep overnight; eat cold the next day.
Serve it like this

Serve cold in a bowl with a little raw mustard oil drizzled on top, alongside rice.
