Classic tomato khejur chutney.

Ingredients

Tomato5 medium, chopped
Dates8, seedless, chopped
Raisins1 tbsp
Sugar6 tbsp
Mustard oil2 tsp
Panch phoron1 tsp
Dried red chilli1
Ginger1.5 cm, grated
Salta pinch
Water½ cup

Method

  1. 1Heat mustard oil, add panch phoron and red chilli.
  2. 2Add tomatoes, ginger and salt and cook until soft.
  3. 3Add dates, raisins, sugar and water and simmer until thick and glossy.
  4. 4Cool and serve at room temperature.
Serve it like this

Serve hot in a deep bowl with a swirl of ghee or a few coriander leaves on top, and rice or rotis on the side.
