Ingredients

4 servings
Rice1¼ cups
Besan (chickpea flour, gram flour)1 cup
Ajwain (carom seeds)½ tsp
Garlic10 cloves, crushed
Green chilli2, crushed
Red chilli powder (indian red chili powder)1 tsp
Turmeric (ground turmeric)¾ tsp
Coriander leaves (cilantro)a handful
Cooking oil (vegetable oil)3 tbsp
Cumin seeds1 tsp
Saltto taste
Water2¾ cups

Method

4 steps
  1. 1Mix besan with ajwain, half the garlic, chilli, half the chilli powder, turmeric, coriander, salt and 1 tbsp oil. Add a little water to make a firm dough and shape into small balls.
  2. 2In a cooker, heat 1 tsp oil, add cumin, then the washed rice, salt and water.
  3. 3Place the gole on top of the rice. Pressure cook 2 whistles and let pressure release naturally.
  4. 4Heat the rest of the oil, fry the remaining garlic until golden, add the rest of the chilli powder and pour over the rice and gole.
Serve it like this

Fluff gently with a fork and serve hot on a wide plate, with raita or a side next to it.
