Ingredients

4 servings
Whole wheat flour (wholemeal atta flour, chapati flour)2 cups atta
Rice flour¼ cup
Rava (semolina)3 tbsp
Waterabout 2 3/4 cups
Onion1 small, finely chopped
Green chilli2, finely chopped
Ginger1.5 cm, grated
Cumin seeds1 tsp
Curry leaves1 sprig, chopped
Coriander leaves (cilantro)a handful
Cooking oil (vegetable oil)about 3 tbsp
Saltto taste

Method

4 steps
  1. 1Whisk the atta, rice flour, rava and salt with water into a thin, lump free batter. Stir in the onion, chilli, ginger, cumin, curry leaves and coriander. Rest.
  2. 2Heat a tawa on medium high. Pour the batter from the outside in, like rava dosa, and fill the gaps.
  3. 3Drizzle oil, cook till the edges brown and the dosa lifts.
  4. 4Flip for 30 seconds if you like, then serve with tomato chutney or coconut chutney.
Serve it like this

Serve straight off the tawa, folded, with chutney and sambar in small bowls on the side.
