Ingredients

4 servings
Dried red chilli8 to 10, soaked
Shallots5, peeled
Garlic3 cloves
Shrimp paste2 tsp
Fishfirm white fish fillet, chunks
Water4 cups
Tamarindpulp, soaked in 1/2 cup water
Fish sauce2 tbsp
Palm sugar (gula melaka)1½ tbsp
Raw papaya (green papaya)green papaya, thick slices
Green beanslong beans, cut
Cauliflowersmall florets
Cabbagechunks
Prawns (shrimp)8, peeled

Method

5 steps
  1. 1Poach 50 g of the fish in the water for 3 minutes; lift it out. Pound or blend it with the chillies, shallots, garlic and shrimp paste.
  2. 2Stir the paste into the simmering water and cook 5 minutes.
  3. 3Add the tamarind water, fish sauce and palm sugar.
  4. 4Add the papaya, beans, cauliflower and cabbage and simmer 8 minutes.
  5. 5Add the rest of the fish and the prawns and simmer 4 minutes until just cooked. Taste: sour first, then salty, then hot.
Serve it like this

Serve in a deep bowl alongside jasmine rice, a Thai omelette and a mild stir fry to balance the heat.
