Ingredients

4 servings
Beef600 g roasting joint
Salt1 tsp
Black pepper1 tsp
Cooking oil (vegetable oil)1 tbsp
Onion1, sliced
Garlic2 cloves
Beef stock (beef broth)2½ cups
Worcestershire sauce2 tsp
Dried thyme½ tsp
Baguette (french bread roll)4 crusty rolls
Butter1½ tbsp
Gruyère cheeseSwiss or provolone, sliced

Method

4 steps
  1. 1Season beef, sear in oil on all sides, then roast at 180 C for 40 to 50 minutes. Rest 15 minutes and slice thin.
  2. 2In the roasting pan cook onion and garlic, add stock, Worcestershire and thyme and simmer 10 minutes. Strain.
  3. 3Butter and toast the rolls, fill with beef and cheese, and grill to melt.
  4. 4Serve with small bowls of hot jus for dipping.
