Ingredients

6 servings
Fish600 g mixed white and smoked fish, in chunks
Prawns (shrimp)200 g, raw
Milk2 cups
Bay leaf (indian bay leaf)1
Butter4 tbsp, divided
Maida (all-purpose flour, plain flour)⅓ cup
Leek1, sliced
Flat leaf parsleya handful
Prepared mustard1 tsp
Egg2, hard boiled
Potato1 kg, for mash
Cheddar cheese½ cup, grated
Saltto taste

Method

4 steps
  1. 1Poach fish in milk with bay 5 minutes. Lift fish out and keep the milk.
  2. 2Soften leek in 40 g butter, stir in flour, then the warm milk. Simmer to a thick sauce; add mustard and parsley.
  3. 3Fold in fish, raw prawns and quartered eggs in a dish.
  4. 4Top with mash made with remaining butter, scatter cheese. Bake at 200 C for 30 minutes.
Serve it like this

Spoon onto warm plates with buttered peas or green beans. Lemon wedge on the side.
