Almonds½ cup, finely ground

Maida (all-purpose flour, plain flour)⅓ cup

Sugar1 cup icing sugar

Egg white4 whites

Method

4 steps

1Cook the butter until it foams and turns nut brown. Strain and cool slightly.
2Mix ground almonds, flour, icing sugar and salt. Stir in the egg whites, then the warm butter and honey.
3Rest the batter 30 minutes, then fill buttered rectangular moulds or a mini muffin tin.
4Bake at 200 C until golden at the edges and springy.
