Ingredients

Digestive biscuits (graham crackers)16 graham crackers or digestives
Fresh cream (thickened cream, heavy cream)1⅔ cups, chilled
Condensed milk (sweetened condensed milk)1 cup
Ripe mango4, thinly sliced
Vanilla essence (vanilla flavouring, imitation vanilla extract)½ tsp

Method

5 steps
  1. 1Whip the cream to soft peaks, then whip in the condensed milk and vanilla.
  2. 2Lay a single layer of biscuits in an 8 inch square dish.
  3. 3Spread a layer of cream, then a layer of mango slices.
  4. 4Repeat for three layers, finishing with cream and mango. Sprinkle crushed biscuit on top.
  5. 5Chill overnight, or freeze 4 hours for a frozen version.
Serve it like this

Cut chilled squares and lift onto plates with a spatula, mango side up.
