Ingredients

4 servings
Vermicelli300 g, broken into short pieces
Prawns (shrimp)250 g, peeled
Squid200 g, in rings
Garlic3 cloves
Tomato2, grated
Olive oil3½ tbsp
Kashmiri chilli powder1 tsp, for pimentón
Saffrona pinch
Water900 ml fish or prawn shell stock
Lemonin wedges
Mayonnaise¼ cup, for alioli
Saltto taste

Method

5 steps
  1. 1Toast the noodles in a little olive oil in a paella pan until golden. Set aside.
  2. 2Sear prawns briefly, set aside. Fry squid, then garlic, tomato and paprika.
  3. 3Add hot stock with saffron and salt, then the noodles. Cook until the liquid is absorbed, adding prawns back for the last minutes.
  4. 4Slide under a hot grill for a few minutes until the noodles curl up and crisp.
  5. 5Serve with lemon and alioli made by stirring grated garlic into mayonnaise.
Serve it like this

Serve straight from the pan with lemon wedges around the edge and a bowl of alioli in the middle.
