Rajma, dry (dried red kidney beans)1¼ cups dry carioca or rajma beans, soaked
Bacon (streaky rashers, streaky bacon)7 rashers

- 1Cook the beans until just tender, then drain.
- 2Fry the bacon and sausage until crisp. Scramble the eggs in the fat.
- 3Add onion and garlic, then the beans, then stir in the cassava flour.
- 4Wilt the collard greens in oil and fold in with spring onion.
